Homemade Granola Bars

These homemade granola bars are quick and simple to make, they don’t use many ingredients (I love simple recipes!) and you can make a big batch to store in the fridge or freezer. They are great to pop in your bag and take to work, or have at home with a cuppa for a mid-morning snack.

I’m a big fan of making your own snacks like this for a couple of reasons.

1️⃣ You know exactly what’s going into them, so there are no hidden additives like in shop bought bars

2️⃣ Shop bought bars are expensive (£1-2 each), so if you can save yourself buying a snack bar out every day, then it’s more economical too 🤗

Granola Bar Recipe

RECIPE:

➡️ 130g oats
➡️ 200g dates (I used medjool)
➡️ 90g honey
➡️ 100g plain almonds
➡️ 60g nut butter (I used crunchy peanut)

METHOD:

🔅Toast the oats and almonds on a baking tray and pop in the oven on 160c for about 10 minutes (or until they are starting to brown).

🔅Chop dates as small as possible, then blend in a food processor (I used my Nutribullet) until they form a type of thick paste. You could add a drop of water if needed to moisten them up.

🔅Once toasted, add the almonds, oats and dates together and mix in a bowl.

🔅 Melt the honey and peanut butter in a saucepan and mix together over a low heat.

🔅 Once combined, add in the oats/almond/dates and stir together until fully mixed. You may need to be a bit tough with the dates as they tend to clump together!

🔅 Once mixed fully, put the mixture into a square baking tin or dish, lined with baking paper to ensure you can lift them out easily.

🔅 Press down the mixture until fully flat and pressed together (I used the flat side of a large spoon to ensure they were as compressed and even as possible.

🔅 Pop in the freezer for 15 minutes

🔅 Lift out of the tin and chop into approximately 10 bars

They last for a few days, if you’re lucky..!
